Why is this salmon so red? Is it dyed?
Wild salmon get their wonderful red colored meat from the natural foods they eat. Copper River Salmon are caught in the ocean when they are still bright, their flesh firm and their bodies full of energy and fat for the long swim to their spawning grounds. Our products are all natural with no dyes, preservatives or taste enhancers added.
What is all of the liquid in with the smoked products?
The "liquid" or "juice" you find in the retort package or jars of Copper River Salmon is the salmon oil contained within the meat. During smoking some of the oil separates from the meat and is seen as a liquid. This liquid is all natural, contains lots of heart healthy Omega 3 oils and adds to the rich and robust flavor of the Copper River Salmon. We suggest saving some of this oil and adding it to your favorite recipes.
What is a retort?
A retort is a package that looks like a foil pouch. The salmon you order in boxes all come in retort pouches. These pouches allow no light or air to enter, maintaining product quality and allowing for an extended shelf life without refrigeration.
How do I get the salmon out of the retort?
Place the retort on a table or flat surface. Remember there will be healthy oils that may drip out of the pouch if you choose to open it bottom side first. Carefully cut open the top foil cover along the top edge and flip the flap back. The salmon may be served from the retort or placed on a serving tray using a spatula.
Could there be a bone in my smoked salmon?
Yes, there could be a bone in your smoked fish. While there is a huge effort to try and reduce the number of bones found in our products there is a possibility you may find a bone. These bones and the skin have been cooked. The bones and skin are full of calcium and other important nutrients. Most people that grew up eating salmon will eat smoked flesh, skin and bones. This is your decision. Proceed at your own risk.
