Salmon Stuffed Mushrooms
2 cups canned salmon or salmon flakes
1/2 tsp horseradish
3 Tbs. finely minced onion
1 tsp dried dill
1/4 cup mayonnaise
1/4 tsp garlic powder
1 Tbs. Dijonaise
grated lemon peel to taste (optional)
Mix all the above ingredients. May add more spices to taste. Rub mushrooms with butter. Stuff mushrooms with ingredients. Place on cookie sheet. Melt 2 Tbs. of butter, add 1/2 cup of seasoned bread crumbs (optional) and sprinkle over stuffed mushrooms. Bake for 15 minutes at 350F. May broil a few minutes to crisp topping. Makes 24-30 mushrooms.
